Fit Foodie: Feeding in a hurry!



My greatest success yet!  Homemade tortillas for chicken fajita night!  I made these tortillas…why?  Because I forgot to buy some and I didn’t feel like dragging the girls out to the store.  Am I upset?  HECK NO!  These turned out millions of miles better than the store!  Plus I think I made my in-laws pretty proud!  The hubby’s family makes all sorts of tasty homemade Mexican dishes…I will never be able to offer that BUT I’m trying & teaching the girls a family tradition in the process so winning all around!  As for the chicken, it was fit & easy Perdue chicken with green peppers & onions sprinkled with garlic & herb Mrs. Dash.  This house fought over who got the leftovers for lunch!!!!!

Turkey Stuffing Meatloaf…  THE PICKY ONE ATE IT!!!!

I used the Stove top box recipe for meatloaf but changed it!  It was so moist we didn’t need a sauce at all!

  • 20 oz ground turkey
  • Low sodium chicken stove top stuffing
  • 2 eggs
  • 1 cup water

Mix and place in a greased loaf pan.  Bake at 375 F for 1 hour.  Done!




Again…keeping it easy!  Steak fajita without the tortillas (they didn’t last this house!) and the steamer bag of cheesy backyard potatoes (my favorite quick side!)
