Fit Foodie: Hasn’t been a lot BUT a lot has been good!

I find that the busy schedule has really impacted our menu planning.  It’s hard to plan around the life of a growing and active family of six.  Adrian’s hours are longer too so trying to keep the motivation up to cook is even getting harder.  I’m trying to find a better way to plan it all out.  Hopefully after pinteresting a bit, I may come up with a way to make it easier.  I’ll definitely share if it works!!!

Homemade sausage ramen


Mini tacos


Fresh veggies in a olive oil, salt & pepper over steamed brown rice AND a rotisserie chicken!



Southwestern Mini Frittatas 

  • 9 eggs
  • 1/4 cup cheddar
  • 1 onion
  • 1 green pepper
  • 1 strip turkey bacon

Chopped everything up. Split into the 6 mini tart pan spots. 350 for 20 mins

Banana Snickerdoodle Protein Muffins

  • 3 medium ripe bananas
  • 2/3 cup sugar
  • 1/4 cup milk
  • 3 tablespoons of applesauce (or veg oil)
  • 1/2 tsp vanilla extract
  • 3 eggs
  • 2 2/3 cups bisquick heart healthy
  • 1/2 cup snicker doodle buff bake almond butter

Mix all together. Spray muffin pan or mini loaf pan and divide down. Mine made 12 and 4 mini loaves. 350 for 20 mins.
