New scheduling and the holidays have made my menu plans really…well…meh. I am struggling to remember to defrost meat before heading out for the first half of the day and then when I get back, I’m realizing that I simply do not have enough time to make it work. One of these days I will get back in sync with it all. It just probably will not be until the middle of next month when training starts up again.
Meal prep: Taco Salads
- Mixed greens
- Grape tomatoes
- Ground turkey with taco seasoning
- Shredded cheddar
- Cucumber ranch dressing
