Fit Foodie: 2018

2018 has had a slow culinary start with Snowmageddon hitting coastal North Carolina.  I had no real desire to cook anything with what we had especially as that dwindled down after the kids being home for 20 days in a row.  I am not quite sure how we are going to make it through their teenage years at this rate!

Popcorn with melted chocolate chips and sprinkles!

The kids were bored of popcorn BUT it was the last snack we had in the house before I had to either head out to the store OR start baking.  All it called for was popping a bag of popcorn, melting 1/2 – 1 cup of chocolate chips, mixing the 2 together, spreading it on a sheet pan with parchment paper and add sprinkles!

Green smoothie

  • 1 cup mixed baby greens
  • 8 baby carrots
  • 1 avocado
  • 1 stick celery
  • 1/2 cucumber
  • 1 bunch basil leaves
  • 2 cup coconut milk
  • 1 scoop protein powder
  • 1 granny smith
  • 2 cups ice

Current meal prepped trifecta

  1. Chicken, spinach & butternut squash stir-fried in coconut oil for 10-15 mins with salt and garlic.
  2. Tomato & cucumber salad with an extra virgin olive oil, salt & lemon juice mixture on it
  3. Grass-fed beef with broccoli, cauliflower, red pepper, carrot, and corn stir-fried with coconut oil and salt.
