I suck at winging it last minute.

I never remember to defrost the meat.

Sometimes I actually setup the crockpot and turn it on...sometimes.

But mostly, my pretty fresh veggies for menu plan get tossed because I'm not following the actual menu plan.

That kind of stings to reveal being I am going to school again for health living and nutrition.

I got nothing. Absolutely nothing.

I changed up the recipe to fit our family a little more. This is a thing I do often with recipes because I am trying my best to maintain certain changes like 80/20 ground beef to ground turkey for the lean protein.

Other changes are usually done using what we have in the house or to make it more kid friendly.

  • White onion instead of yellow
  • One can of kidney beans instead of two
  • No jalapeños
  • No saltines
  • Topped with cheddar and sour cream

Our switch ups in this one were minimal. I focused on using the hidden veggie spaghetti and adding in fresh oregano from the Farm Fresh to You box.

This was a fun brinner idea but it's intent was to test it out for a bible study brunch idea. Our switch up for this one was using Italian sweet sausage instead of pork breakfast sausage due to the leanness of the protein. I also did not put the Italian seasoning in because of the switch made.

All together it was a great week of testing out new recipes! The kids actually ate...well, they tried everything. We are running into a little bit of push back from some as their own favorites like pizza, tacos and burgers have really set in. I am hoping that they will continue to be open minded though.
