Kodiak Cake Protein Pancakes in a Mug


My family was scavenging early Sunday morning.  It was the week of payday aka the week that the refrigerator is completely empty all of the sudden.  Everyone was getting a little whiney.  This one wanted eggs.  That one wanted pancakes.  Someone suggested frozen waffles.  Everyone shot that down.  And to be quite honest, I did not want to cook.  I meal prep and cook throughout the week and I was tired.

I opened the pantry and saw this box of cake in a mug that was from when we first moved into the house.  I figured that maybe a coffee cake mug would make someone the breakfast that they wanted and I would not have to clean a million pans and bowls.  That, my friends, triggered a thought.  I had tons of Kodiak Cake mix!!

When I started the process of whipping up the Kodiak Cake Pancakes in a Mug, it immediately won over the littlest two with the simple movement of grabbing down the chocolate chips.  Gotta love the easy fixes in their little worlds!  I gave out my "well, I don't know if this is going to be good, but I think I have come up with something" and started mixing six mug pancakes.

You guys...they were amazing!!!!  Everyone loved them and even requested seconds!  I may play around a little bit to bump up the amount in each mug to fill their bellies a little more but it definitely was enough to spare me from the frying pans and mixing bowls mess that it pancake making!

Roasted Sausage & Veggies Yum
  1. Chop it all up.
  2. Spray it down with EVOO.
  3. Add salt and pepper.
  4. Cook for 15 minutes in the oven at 400 degrees F.
