Plans & Plates: Apple Pear Crisp Recipe & Week 44

Lofty goals...  That's what I had!  Lofty goals.  Okay, maybe not lofty but I definitely did not pay attention while I menu planned.  I saw "easy", "instant pot" and a delicious picture.  I need to be more thorough when I look through recipes for menu plans though.  Almost every one of them required prep work before throwing the meats from the grocery bags into the freezer #fail.  One magical thing did happen though!  I put together an apple pear (Asian pear) and pear crisp for dessert.  It was super sweet and hit the spot for a wicked sweet tooth.

INSTANT POT BUTTERMILK HERB CHICKEN

For this dinner, I portioned the chicken out separately for children and adults.  We did not have the time to marinate the chicken so we threw it all in the instant pot.  The chicken came out amazingly tender and basically had to be scooped onto the plate so it did not fall apart.

The meal that did not happen...  You guys, I bought the wrong noodles #fail and our quick dinner turned into a normal lasagna baked in the oven.  It was very tasty BUT still not what was intended.

Instructions
  1. Chop it all up.
  2. Spray it down with EVOO.
  3. Add salt and pepper.
  4. Cook for 15 minutes in the oven at 400 degrees F.
