Plans & Plates: Testing out Plan To Eat & Week 45

Menu planning is hard.  So many people put it out there that it is so easy, but it's not.  Not when you are managing larger families, have growing kids, picky eaters...well, anything beyond a family that eats the same exact things at the same exact times.  Not knocking that...actually I envy that!  I envy the ease of menu planning without the curled lips and "yuck" whispered under their breaths.

Post-move and back to stay at home mom life, I was trying to get Pepperplate working for me again but I was really disappointed.  A lot of the links for recipes I wanted to make, no longer would port into the website.  I started to add them in manually and a day later, I was done with one two-week period.  That amount of time is just too much for a menu plan.  After a little bit of googling menu planning apps and testing a handful of the top rated, I settled into Plan To Eat.

So far so good with this one!!!  There is an annual cost for it, but they offer a 30-day free trial.  I am more than likely going to end up purchasing the service after how well we have stayed inside our grocery budget.

Meal prep salads

So real talk...I love love love soup and salad.  I could eat them every day of my life.  I do not know why.  It is just simply two of those foods that I love.  Now, here's the crazy thing.  Sometimes I feel embarrassed to admit that.  Like not wanting something else like pizza, tacos, cake, wine, beer, etc is a bad thing.  I want a HUGE salad.  One the size of a mixing bowl!

Salsa chicken tostadas

Salsa Chicken Tostadas Yum

  1. Place chicken breasts in an electric pressure cooker.
  2. Top with taco seasoning.
  3. Pour salsa on top.
  4. Place lid on the pot and lock in place. Select the Poultry setting for 15 minutes.
  5. Allow pressure to release naturally after the cooking time has ended (about 20 minutes). The center of the chicken should read at least 165 degrees F (74 degrees C).
  6. Shred the cooked chicken.
  7. Place parchment paper on a sheet pan.
  8. Lay out the tostadas and top with chicken & cheese.
  9. Broil until melted. The time is dependent on your oven.
  10. Enjoy!
