Plans & Plates: MUFFINS!!! & Week 46

I love it when a good plan comes together.  Does anyone else remember hearing that often from their childhood?  I can close my eyes and picture my Pop Pop Frank sitting in his chair watching A-Team.  It is one of my happier memories.  That and Hogan's Heroes.  But more than that...  I remember the smells in the house growing up.  I remember the smell of seasoned breadcrumbs covering a perfect cutlet sizzling in a frying pan.  I remember the spritz of citrusy happiness flooding the air as he added some lemon to it all.  That crunchy, sour tasting chicken cooked to a juicy, moist plate of amazingness.  This week I had a moment that brought all of that back.

Sicilian Rice Ball Casserole

I was preparing chicken for meal prep containers and putting together this Sicilian Rice Ball Casserole when it happened.  For a second, I was back in Pop pop's kitchen waiting for a bit of that lemon chicken cutlet.  The meal itself was one of the best.  The only changes we had were the use of brown rice and chicken sausage.

Healthy Chocolate Chocolate Chip Banana Oat Muffins Yum

Instructions
  1. Pour the oats and almond milk into a large bowl; mix well. Allow to soak for about 30 minutes.
  2. Meanwhile, line a standard muffin tin with 12 liners and lightly spray the liners with foil. (Don't forget this step or the muffins will stick a little to the liners.)
  3. Preheat the oven to 400 degrees F.
  4. Add the brown sugar, mashed bananas, egg whites, honey, applesauce, and vanilla to the oats and mix well.
  5. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Slowly add the flour mixture ingredients to the liquid ingredients and mix with a spatula until just incorporated.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared muffin tin.
  8. Bake until a toothpick inserted comes out clean, 24-28 minutes. Let cool before serving.

Chicken and White Bean Enchiladas with Creamy Salsa Verde

Our enchiladas had a little less spice to it for my acid reflux and the kids' sake!  The chicken and white bean mix was so well seasoned though that it did not matter!
