Plans & Plates: Testing out Plan To Eat & Week 45

Menu planning is hard.  So many people put it out there that it is so easy, but it’s not.  Not when you are managing larger families, have growing kids, picky eaters…well, anything beyond a family that eats the same exact things at the same exact times.  Not knocking that…actually I envy that!  I envy the […]

  1. Pour the oats and almond milk into a large bowl; mix well. Allow to soak for about 30 minutes.
  2. Meanwhile, line a standard muffin tin with 12 liners and lightly spray the liners with foil. (Don't forget this step or the muffins will stick a little to the liners.)
  3. Preheat the oven to 400 degrees F.
  4. Add the brown sugar, mashed bananas, egg whites, honey, applesauce, and vanilla to the oats and mix well.
  5. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Slowly add the flour mixture ingredients to the liquid ingredients and mix with a spatula until just incorporated.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared muffin tin.
  8. Bake until a toothpick inserted comes out clean, 24-28 minutes. Let cool before serving.

Fit Foodie: Meal prep for one, please

I’ve been wondering about attempting different foods lately BUT I have also been wondering about packing it all away differently too.  Generally, I pack everything away single serving to make it easier for my husband but I despise how quickly that fills the sink after only one day of him & I eating it.  I […]
